These peanut butter cookies are soft and chewy with a layer of melted chocolate on top. Delicious with a glass of ice cold milk.
Preheat oven to 300ºF.
In a medium bowl, combine flour, soda, and salt. Mix well with a wire whisk and set aside.
In a large bowl, blend sugars, using an electric mixer set at medium speed. Add butter and mix to form a grainy paste.
Add eggs, peanut butter and vanilla and mix until light and fluffy. Add the flour mixture and mix until just mixed.
Drop by 1/4 cupfuls onto an ungreased cookie sheet. With a fork gently press cookies in a crisscross pattern.
Bake for 18-22 minutes or until slightly brown along the edges.
If you are adding melted chocolate, immediately place a chunk (3 squares works for me) of Hershey’s chocolate on top of the hot cookie. Spread once chocolate looks glossy. Let cool.

These were fantastic! I made them into one large bar cookie and spread chocolate chips onto them! Yum! Our Irish friends loved them!! We don’t get hershey bars here but we are not lacking for great chocolate Thanks for a great recipe!!
