Description

Perfect for Christmas!

Ingredients

  • FOR THE COOKIES:
  • 3 cups Flour
  • 1 teaspoon Baking Soda
  • 1-½ teaspoon Baking Powder
  • 2 Tablespoons Cocoa Powder
  • ½ teaspoons Salt
  • 2 whole Eggs
  • 1-½ cup Sugar
  • ½ cups Oil
  • 1-½ teaspoon Vanilla
  • 1 cup Buttermilk
  • 6 drops Red Food Coloring
  • FOR THE ICING:
  • ¼ cups Crisco
  • ½ cups Butter
  • 3-½ cups Powdered Sugar
  • 5 Tablespoons Half-and-half
  • 1 teaspoon Vanilla
  • 2 teaspoons Cinnamon
  • 2 Tablespoons Turbinado Sugar

Preparation

Preheat oven to 350 degrees F.

Sift flour, baking powder, baking soda, cocoa, and salt together. Set aside.

In a mixing bowl, add eggs and sugar. Beat until well combined. Batter should be a pale yellow, and this will take about three minutes. Add in oil and vanilla. Beat until combined.

Gradually add flour mixture and buttermilk into the sugar mixture. Add about one cup flour mix, then half a cup buttermilk. Blend. Repeat this process until everything is blended. Add in red food coloring and mix together until desired redness.

Drop Tablespoon sized dollops of dough onto a cookie sheet and bake for 11 minutes. Then remove the sheets from the oven and let cookies cool.

While cookies are cooling, make icing. Prepare icing by creaming together the Crisco and butter. Add in powdered sugar and half and half. Once combined, add vanilla, cinnamon, and turbinado sugar. Smear icing on the bottom of one cookie and press together with another cookie to form whoopie pies.
