Description

The perfect blend of pumpkin and oatmeal create these chewy and delicious Pumpkin Oatmeal Cookies. Enjoy!

Ingredients

  • 3 cups Rolled Oats
  • 2 cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • ½ teaspoons Ground Cloves
  • ½ teaspoons Salt
  • 1 cup Butter, Softened
  • 1 cup Light Brown Sugar
  • ½ cups White Sugar
  • 1  Large Egg
  • 1 teaspoon Vanilla Extract
  • 1 cup Pumpkin Puree
  • 1 cup Dried Cranberries

Preparation

Preheat oven at 350ºF.

In a medium bowl, combine rolled oats, flour, baking soda, cinnamon, cloves and salt. Set aside.

Using an electric mixer, combine butter and sugars and cream together until light and fluffy. Add in eggs, followed by vanilla and pumpkin. Mix in flour mixture until combined, then stir in cranberries. Drop tablespoon size spoonfuls onto baking sheets.

Bake for 10-12 minutes in the preheated oven. Cool for a few minutes on baking sheet before transferring to wire racks to cool completely.

Variations and notes:
Add in walnuts.
For a firmer cookie, bake longer.

Thanks! This is a great recipe, just what I as looking for. I added half whole wheat and chocolate chips and nuts…super good!

These are very tasty cookies. I didn’t have cranberries so I added cinnamon chips and a little bit of orange zest. They disappeared quickly. I do agree that they are a bit cakey, but that didn’t seem to stop people from taking seconds.

Just made these. Excellent! I used white chocolate chips instead of cranberries. Yummy!

these were great, a little more cakey than i usually like in an oatmeal cookie but still tasty. i subbed in walnuts for the cranberries.

These are so good! I’ve made them twice now and have added chocolate chips instead of the cherries. Make these tonight, you won’t be sorry.
