Description

These soft moist cookies are amazing! The chocolate frosting is just decadent!

Ingredients

  • FOR THE COOKIES:
  • ¾ cups Packed Brown Sugar
  • ½ cups Butter, Softened
  • ¼ cups Peanut Butter
  • 1 whole Egg
  • ½ teaspoons Vanilla
  • ¾ cups Mashed, Ripe Banana (2 Small Bananas Should Yield 3/4 Cups)
  • 3 cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Salt
  • _____
  • FOR THE FROSTING:
  • 1 cup Powdered Sugar
  • ¼ cups Butter, Softened
  • 1 piece Unsweetened Baking Chocolate (1 Ounce Square), Melted And Cooled
  • 2 Tablespoons Milk

Preparation

Heat oven to 350 degrees F. Line cookie sheets with silpat mats.

In a large bowl combine brown sugar, butter, peanut butter, egg and vanilla. Beat with an electric mixer until light and fluffy. Add bananas. Beat at low speed until just combined. Add in flour, baking soda and salt. Beat at low speed until soft dough forms.

Drop by heaping teaspoons onto cookie sheets. Press down the dough slightly to flatten. Bake for 10-12 minutes until browned and set. Cool completely on a rack.

For the frosting:
Combine the powdered sugar, butter, melted chocolate and milk, beat until smooth. Use just enough milk to get a thick, spreadable icing.

Spread icing on cooled cookies. Let dry completely before storing in an airtight container.
