These are a wonderful chewy cookie, full of gingery, molasses goodness.
In a large mixing bowl, cream butter and sugar. Beat in egg and molasses. Add dry ingredients and beat on low speed to incorporate.
Roll dough (about 1 tablespoonful) into balls and roll the balls in granulated sugar. Place on parchment-covered baking sheet (or ungreased sheet) and bake at 350ºF for 8-10 minutes.
Note: Do not press down on the cookie dough ball before you bake them. They will flatten themselves.
