Description

Chewy in the middle, while crisp at the edges, this recipe for Healthy Hazelnut Cookies is a winner.

Ingredients

  • 1-¼ cup Hazelnut Meal Or Ground Hazelnuts
  • ½ teaspoons Baking Powder
  • ½ teaspoons Vanilla Powder Or Extract
  • ¼ teaspoons Salt
  • 2 Tablespoons Honey Or Maple Syrup
  • 1 Tablespoon Coconut Oil, Melted
  • ⅛ cups Cacao Butter, Melted, Substitute Nut Butter Or Sunflower Butter
  • 3 Tablespoons Water

Preparation

If using hazlenuts, ground nuts into flour before combining all dry ingredients together.

Mix wet ingredients (honey or maple syrup, coconut oil, cacao butter and water) in another bowl before mixing them with dry ingredients.

Place dough in fridge for around 30 minutes. This will make it easier to form cookies and it’ll improve their texture. This step can be skipped if you’re in a hurry, just know that the texture might be slightly different.
Preheat oven to 170ºC (approximately 345ºF).

Line a baking tray with parchment paper and scoop out 1 tablespoon of dough for each cookie. Form dough into a cookie. Use your fingers or back of a fork to press cookie and slightly flatten.

Bake cookies for 18 minutes. The cookies should be slightly golden. They will still be soft while they are in the oven, but they will harden up slightly once cooled.

Cool the cookies on a wire and store in airtight container.
