Description

From the best cookie-baker of all times: my grandmother.

Ingredients

  • 1 whole Egg
  • 1 cup White Sugar
  • ¾ cups Butter Or Shortening
  • ¼ cups Molasses
  • 2 cups All-purpose Flour
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Ground Ginger
  • 2-½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • ½ cups Coarse Sugar For Coating Cookies

Preparation

Preheat oven to 350 F.

Put the egg into a large mixing bowl and beat it. Use a handheld mixer to beat sugar into beaten egg. Next mix in shortening and molasses and beat until well-mixed. Mix in flour, spices, baking soda and salt.

Put the coarse sugar in a shallow bowl. Roll 1 1/2 tablespoon sized scoops of dough into a ball, then roll in the coarse sugar. Place balls onto greased baking sheets, spaced 2″ apart. Do not flatten balls.

Bake for roughly 10 minutes then remove pans from the oven. Transfer cookies to a wire rack to cool.

Makes about 2 dozen cookies.

I love this recipe. The cookies were soft and left the perfect amount of warmth in the back of my throat.

I’m a huge fan of gingersnaps and I loved these even more. I loved how they stayed chewy even after they cooled. My family doesn’t love gingerbread but they gobbled these up quickly. This is definitely going in a permanent spot in my Christmas Cookie recipe collection. Thanks Grandma Gordon!
