Easy Lemon Cookies

Description
Though not from scratch, these are so yummy you’ll easily forgive using a box cake mix! Always a hit at parties, too.
Ingredients
- 1 box Lemon Cake Mix (18 Ounce Box)
- 2 whole Eggs
- ½ cups Canola Oil
- 1 container Lemon Frosting (16 Ounce Container)
Preparation
Preheat oven to 350 degrees F.
In a large bowl combine cake mix, oil and eggs. Mix well until lumps disappear and batter is cake-batter consistency. Drop by tablespoonfuls onto greased cookie sheet and bake 8 to 10 minutes until set. Remove from oven and let cool 2 minutes. Remove from pan to wire rack. Frost with lemon frosting when completely cooled.
Note: Feel free to substitute applesauce or any similar fruit puree for one of the eggs or the oil for a healthier version.

these were my favorite cookies when i was younger. i usually mix lemon and cream cheese frosting and add extra lemon juice for a little zing.
