These gluten-free molasses sugar cookies have to be one of my most favorite cookies of all time—soft, chewy and slightly crunchy on the outside!

I made these with a German chocolate mix and they were tasty! Thanks for posting – it’s a quick and easy way to get dessert on the table.

These are especially good after having been in the freezer. They are nice and chewy as they just start the thaw.

I used 1 cup of cool whip and all I had was crumbs. I had to add almost another whole cup to get the right consistency. Did anyone else have this problem?

I just got my first batch out of the oven. Even though I had to use more cool whip than called for they turned out good.

And I forgot to mention as my husband is diabetic i made these with sugar free cool whip and a sugar free cake mix. He said they are really good hot. Now we will have to wait and see how they taste cold. He could not wait!
