Holy moly! These are GOOD. Too bad there was some filling left over….might just have to use a spoon. Honestly, the cookies are chewy and the filling is delicious with the peanut butter and cream cheese. Easy recipe and great results, can’t ask for anything better!

Yum! And easy! Doubled the batch for a block party (notice it only yields 16 cookies) – I too had some filling left over so I’ll be making one more single batch to keep at home!

These are really good. Don’t be fooled though, the cookies will not appear completely ‘done’, but they are. They seem to firm-up after they have cooled a while. If they become too hard, the filling ‘squirts’ out from between the cookie when eating. Undercook the cookies, fill, and then put in the freezer for a great frozen treat! Almost like an ice-cream sandwich.

These turned out WONDERFUL. I had nothing but extravagant compliments when I made these. They had no time to go into the fridge since they were eaten up!

My friend and I made these and found that the cookies got a bit too puffy – 1″ balls could benefit from being smooshed down a bit. Ours didn’t flatten, which made the “sandwich” part of things difficult. Otherwise, we loved the flavor!

Perfect and amazing. You know the cookies are done when they start to crack on top! Don’t take them out until you see them do that. My guests loved them and I’m going to make them all the time for potlucks!

I like to refrigerate mine because they will last longer, but they will last up to two days room temperature.

I made a batch after seeing the recipe this morning. My son and daughter in law are getting a new home and I wanted to bake them something. I had one bite (I’m on a diet and it was hard to put the cookie down, but I did) to test them and WOW! they are really, really good!! They are in my recipe box now so thanks for sharing.

I needed a bake sale cookie that was quick and easy (I normally go for the Tollhouse-back-of-the-bag-of-chocolate-chips-recipe).
This was quick and easy, and yummy. And….I WON the bake sale!!!!

Ok, these are heavenly! My neighbors thank you also. The only thing I might do different is instead of 1 inch balls, flatten them out a bit so not so thick after sandwiched together. But regardless they were to die for…that icing!

I have a very similar recipe for what we call “oreos” they don’t have peanut butter in the filling and the cookie batter seems to be thicker than this one. You can throw all sorts of yummy flavors in the filling part.
