Description

It was only a matter of time before I made these, substituting Biscoff spread for the cocoa and peanut butter!

Ingredients

  • ½ cups Butter
  • 2 cups Sugar
  • ½ cups Milk
  • ½ cups Biscoff Spread
  • 1 teaspoon Vanilla Extract
  • 1 pinch Salt
  • 3 cups Quick Cook Oats

Preparation

In large saucepan, mix butter, sugar and milk on medium high heat. Bring to a boil, and boil for one minute (don’t skip this step)! Remove from heat.

Stir in the Biscoff spread, vanilla and salt until thoroughly combined. Fold in oats.

Scoop cookie dough onto parchment paper in 1-2 Tablespoon-sized scoops. Allow to set (about one hour). Remove from the paper and store in an air tight container. Yum.

These cookies were very quick and easy to make. I used Biscoff spread and thought they were “okay”. I too found them a bit on the sugary side, and I would have liked them to have more biscoff flavor.

My husband loved these, but they were a bit too sugary for me. Maybe it was the substitution I made; I used Trader Joe’s Cookie Butter, which I assume must be similar to Biscoff spread because it tastes just like a Biscoff cookie :) Thanks for sharing!
