Description

A soft and chewy twist on my favorite cookie.

Ingredients

  • 1-¼ cup All-purpose Flour
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • ½ teaspoons Cinnamon
  • 2-½ cups Rolled Oats
  • ¼ cups Chopped Walnuts (optional), Up To Double The Amount To Taste
  • 1 stick Unsalted Butter
  • ½ cups Granulated Sugar
  • ½ cups Brown Sugar
  • 1 whole Egg
  • 1 Tablespoon Honey
  • 1 teaspoon Pure Vanilla Extract
  • 1-½ cup Mashed Ripe Banana

Preparation

1. Preheat oven to 350ºF. Sift the flour, baking soda, salt and cinnamon into a large bowl and set aside. Add the oats and walnuts and combine.
2. In the bowl of a stand mixer fitted with a paddle attachment, cream the butter and sugars on medium speed until smooth.
3. Reduce speed and add the egg, honey, vanilla and banana and whip until well-incorporated.
4. Turn the mixer off, add the dry ingredients and slowly turn the mixer back on. This step is sometimes easier to do by hand.
5. Place rolled balls of the dough on lined cookie sheets and bake at 350ºF for about 8 minutes. Transfer to a wire rack to cool. The recipe will make about 3 dozen cookies.

My 3 year old and I loved these! I added 2 Tbs of ground flax seeds and 1 cup of milk chocolate chips. Great recipe!

These were exactly what I was hoping for. A great way to use up 2-3 bananas, lots of oats, added a half cup each of toasted walnuts and raisins, plus ground flaxseed. A healthy delicious snack for me and the kids. Perfect!

Just finishe making these as written except I added raisns. They were exactly what I was looking for to use up my old bananas. Super-moist and delicious!!

I immediately printed this and gave to my 15-yr old daughter to make (hey – I’m a busy woman, here!) – and they turned out FABULOUS! Next time I may add some ground flax to increase the nutritional value…

The batter was not as stiff as I thought it should be, but we made and baked them as noted and they turned out super-moist!
