Description

A wonderful trio of chocolate, almonds and coconut!

Ingredients

  • 1 cup Salted Butter, Softened
  • 1-½ cup White Sugar
  • 2 whole Eggs
  • 2-¼ cups Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 2-½ cups Sweetened Shredded Coconut
  • 3 cups Chocolate Chips
  • 2 cups Peeled, Slivered Almonds

Preparation

1. Preheat the oven to 350 F and prepare two sheet pans with parchment paper or Silpats. Set aside.

2. In a mixing bowl, cream together the butter and sugar until creamy.

3. Add the eggs and beat until creamy

4. Meanwhile mix together the dry ingredients (flour, baking soda and salt) in a separate bowl.

5. Add the dry ingredients into the mixing bowl and mix on low speed until you have a thick cookie dough.

6. Add the coconut, chocolate chips and almonds and mix until well combined.

7. Scoop the cookie dough onto the prepared pans, making sure to leave ample room between each, and bake at 350 F for about 10 minutes. (When you take the cookies out of the oven they should still be a bit doughy looking in the middle—they will stiffen up).

Loved these! I halved the recipe based on Teresa’s review, thank you. Also added the almond and vanilla extract, thank you irenej. It didn’t say whether to use milk chocolate or semi sweet so I used semi sweet as I think Almond Joys use dark chocolate, and they turned out fabulous!

Really good recipe. Taste just like an almond joy and the recipe makes alot of cookies. They didn’t spread as much as a chocolate chip cookie in my opinion. Which is a good thing, you can fit more on a pan.

Very good cookie!! I used 1 1/2 cups of sliced almonds because that’s all I had. I also added a 1/4 tsp almond extract and 3/4 of vanilla extract. Turned out great!! My husband loves them!!

I think these are the best cookies my Mom and I have ever had the fun of making together! We both love Almond Joys and this spin absolutely exceeded our expectations. Scrummy!!!

These were great! I only used 1 1/2 cups coconut and 1 cup almonds. Loved these, and will be making them again!
