This dish will even tempt those who say they don’t like lentils, and will definitely please confirmed lentil eaters. It requires very little preparation, but takes a while to cook, so it’s the perfect thing to make on a Sunday afternoon for dinner through the week. It serves four as a soup or a light meal, and is the perfect accompaniment to some good sausages for a heartier meal.

My grandmother made this while I was visiting this weekend. This recipe is from the Associated Press’ Jim Romanoff.

This is my version of black bean enchiladas. It’s a combination of the best of several different recipes that I’ve seen. They make a hearty, meatless meal that has just the right balance of spiciness for my family. You can certainly reduce (or increase) the amount of jalapeño that you use, and any kind of cheese will do!

This Veracruz sauce is rich and complex. It’s traditionally served on seafood.

Polenta con fagioli is a fancy Italian name for corn meal mush and beans. It’s meatless, but with the optional sausage and mushrooms, it’s really tasty. Then you might be tempted to leave out the beans. If you do, I’ll never know.

These bad boys might take a while to bake, but they are most definitely worth it!

Rich, delicious baked beans with bacon and beef. A great meal by itself or served with bar-b-q chicken.

This is my rendition of my mom’s pinto beans. I’ve perfected them over the years and I think they’re delicious. Try them and let me know what you think.

Great comfort food – Italian style! This is a dish that, depending on the region, will vary in consistency – from soup-like to stew-like to everything else in between.

Heather is a Texas native and the blogger behind Heather's Dish. She's mom to Weston, wife to Nate, and they live in Little Rock, Arkansas with their two "stubborn and saucy" dogs Bunker and Keira. In her blog, she shares her photographs, random musings (serious and silly alike), and all kinds of scrumptious recipes---and not just evil variations of her favorite mac and cheese. Her enviable TK recipe box is a testament to that. Go see for yourself!
