Description

I love Indian food, but I can’t always get to a restaurant. This recipe is an easy and yummy way to get a quick Indian fix. Plus, it is healthy and nutritious!

Ingredients

  • 3 Tablespoons Olive Oil
  • 1 Tablespoon Cumin Seeds
  • 1 whole Medium Sized Onion, Finely Diced
  • 1 whole Jalapeno (or Green Chilies For More Heat) Pepper, Finely Diced
  • 1 teaspoon Fresh Grated Ginger
  • 3 cloves Garlic, Grated
  • ½ teaspoons Turmeric
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Paprika (or Chili Powder For More Heat)
  • Salt To Taste
  • 1 can (14 Oz. Size) Diced Tomatoes
  • 1 cup Water
  • 2 Tablespoons Tomato Paste
  • 2 cans (15 Oz. Size) Low Sodium Garbanzo (Chickpeas) Beans, Rinsed And Drained
  • 1 Tablespoon Cilantro, Chopped

Preparation

1. Add olive oil to large frying pan (with lid) on medium-high heat. When oil is hot, add cumin seeds and fry until the seeds sizzle and pop. Add onions and peppers and saute until the onions start to soften.

2. Push aside the onions and add to the center of the pan the grated ginger and garlic. Add the spices and some salt and saute until well mixed. Add diced tomatoes and cook until the tomatoes become soft.

3. Add about 1 cup of water and tomato paste and bring to boil. Add the beans and stir. Let the beans simmer under cover until the sauce thickens slightly and the beans become tender.

4. Stir in chopped cilantro and serve with rice or naan.
