This is my husband’s hands-down favorite recipe of mine. He insists that it be served with asparagus and I insist that it be served with mashed potatoes. The glaze is tangy, rich and the perfect complement to pull the main dish and side dishes together. I usually use lamb shoulder chops as they are cheaper and the marinade makes them nice and tender. Lamb chinthamani is one good spicy dish that can be enjoyed once in a while. Even though it is extremely spicy, it is also extremely addictive. You’ll take one piece, telling yourself to stop, but your hand will reach for the next one and it’ll just keep continuing. You will be surprised to know that this dish was made with just three main ingredients: tons of dry red chili and equal portions of onions and lamb.
