Description

A healthy breakfast that tastes like a splurge!

Ingredients

  • 1-¼ cup White Whole Wheat Flour
  • 2 Tablespoons Granulated Sugar
  • 2 teaspoons Baking Powder
  • ¼ teaspoons Salt
  • ½ teaspoons Cinnamon
  • ¼ teaspoons Nutmeg
  • 1 cup Skim Milk
  • 1 whole Egg, Yolk And White Separated
  • ½ teaspoons Vanilla
  • 2 Tablespoons Canola Oil Or Melted Butter
  • 1 whole Very Ripe Banana, Mashed
  • ¼ cups Chopped Walnuts
  • Walnuts, Banana Slices, Maple Syrup (optional)

Preparation

In a large bowl, whisk together all of the dry ingredients (flour through nutmeg). Combine milk, egg yolk, vanilla, oil and mashed banana in another bowl. Make a well in the center of the dry ingredients and pour in the wet ingredients. Stir together until just combined.

Whip egg white until stiff peaks form. Gently fold whites into the batter. Stir in walnuts.

Pour a heaping 1/3 cup of the batter into a hot, greased waffle maker and cook to your preference (according to manufacturer’s instructions). Repeat with remaining batter.

Serve with fresh banana slices, more walnuts and maple syrup.

LOVED these! They are great frozen and then reheated in the toaster. You wouldn’t even know these were whole wheat and the nuts add such a nice texture Thanks!

Aside from the fact that the taste was a bit floury it was delicious. I made these for my dad who’s a banana fanatic and he loved them.
