Description

A tradition in our house. The smell of these waffles is sure to get anyone outta bed.

Ingredients

  • 1-¾ cup All-purpose Flour
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Salt
  • 2 whole Egg Yolks
  • 1-¾ cup Milk, Whole Or Skim
  • ½ cups Melted Butter (1 Stick) Or Substitute Canola Oil
  • 2 whole Egg Whites
  • ½ teaspoons Vanilla Extract

Preparation

In a bowl combine flour, baking powder, and salt.

In another bowl beat egg yolks slightly, add milk and melted butter/oil. Pour this mixture into the flour until just combined, leave it lumpy.

In a separate bowl combine egg whites and vanilla and whip to stiff peak. Then gently fold into the bowl of batter.

Then pour batter into a preheated waffle iron. Cook until golden. Repeat until you use up all of your batter. Top with maple syrup or jam.

Makes 4 servings.

I started substituting bread flour and I think that makes them even better. Still getting compliments from waffles lovers/haters alike! :) I always make a double batch and save some for during the week.

These are delightful and worth the extra effort. They taste just like the waffles from my favorite breakfast joint (a VERY high compliment) and the texture is just great. I’m sure the beaten egg whites are the key. Will definitely make again.

(I added 2 tablespoons of sugar to the dry ingredients. We’re not big syrup eaters, so we like the waffles themselves to be slightly sweet.)

I hate dirtying 3 bowls when I don’t have a dishwasher; but the taste of these waffles more then make up for that!

Very fluffy with a delicious light buttery taste, this one is going in the recipe box! :)
