I made these during the Snowpocolypse in February, and they were AWESOME. Super easy and delicious, and I’m not even a huge pancake fan. I recommend these to any of my friends when they’re looking for a good pancake recipe.

So good I felt that my syrup did not serve them justice. I was a lazy mommy when I made them….I did not whisk the egg white to soft peaks and I had to make a “homemade” buttermilk. They still turned out awesome!

This is my new go-to pancake recipe! My family adores them!!! I make a full batch and freeze them, then pop them in the toaster to heat them up for my son early in the morning before school.
Also, I have made these both ways now… beating the egg whited separately, and forgoing the egg white step. They taste exactly the same to us either way.

We made these and they were the best buttermilk pancakes we’ve ever made. Now I know we can whip them up with no need to go to the diner! The leftovers froze well too!

these were fantastic!! i used cake flour instead of regular and added cinnamon and bananas – AMAZING. my boyfriend and i thought they were some of the best pancakes we’d ever eaten. he went on to play the best game of basketball he’s played in a long time and now is requesting that i make these before every game.

Wow! You were right about these being nice, fluffy, truckstop-style pancakes! My boys want a hearty breakfast on the weekends and these did the trick, with slabs of thick bacon on the side. I can see that this could be one of those recipes you can tweak by adding blueberries and lavender, or walnuts and bananas, yummy stuff Clarkitect! Thanks for the recipe.

I finally found THE pancake recipe!! Thank you!!! This is hands down the best pancake recipe EVER!! As the name implies, they are just like truckstop pancakes. DELICIOUS!!!!
