Description

Don’t head out to the interstate to get a tall stack of buttermilk pancakes. These are quick and easy fluffy cakes that you can pile high at home on a Saturday morning.

Ingredients

  • 2 cups All-purpose Flour
  • ¼ cups Sugar
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 2 cups Buttermilk
  • 4 Tablespoons Butter
  • 2 whole Large Eggs
  • 1 teaspoon Vanilla
  • ¼ cups Milk

Preparation

Combine dry ingredients in a large bowl.

Melt butter and separate eggs. In a medium bowl, whisk the egg whites until stiff peaks form. Then mix in the butter, yolks, and vanilla with the whisk. Then stir in the buttermilk.

Stir the wet ingredients into the dry ingredients until they are just combined. Add milk as needed until batter reaches desired consistency.

Pour batter onto a hot buttered griddle using approximately 1/4 cup of batter for each pancake. Flip when bubbles begin to form on top.

Best buttermilk pancakes I’ve ever made. I did not add any of the extra milk, and I love how thick they turned out. Just the way I like them!

When I’m craving ‘those’ pancakes…this is it, but better. I never keep buttermilk around so I just use 2 cups skim milk plus 2 TBSP vinegar and let it sit for awhile while the egg whites are whipping up in the stand mixer.

I found these to be very eggy… disappointing! They are light and almost spongy, good but not enough to make them again. They aren’t as good as ivoryhut’s recipe for banana pancakes either.

For me, my pancakes turned out thin and crispy. I think I may have added too much milk. The recipe would make a good starter for add-on pancakes (fruit, nuts, chocolate chips), but for me, they’re not that good on their own. :) I will stick to Clarkitect’s awesome (White) Chocolate Pancakes from now on.
