I made these this morning and they were a big hit! I loved them; the spice was perfect and I really liked that they weren’t too sweet.

I confess I added 1/3 cup of sugar, and since I had a mashed sweet potato already, that’s what I used. They were fluffy and fab. Also, I had that lingering 1/2 cup of sour cream in the fridge, so I used a cup of milk, 1/2 c. sour cream. Worked great! You can make a batch and freeze half for another day (if there’s just 2 of you that is). Thanks Kim.

These are awesome! Made them this past weekend and everyone loved them. They’ve been requested for Thanksgiving breakfast! AMAZING!!!

I have made these twice and loved them both times. I did not have spelt flour (I will get some!) but substituted whole wheat pastry flour for the 2 c. total for a higher fiber option.
I thought the consistency was perfect. I did add 2 Tbsp. of sugar and chocolate chips, because my husband thinks all pancakes need chocolate chips, and I don’t argue with chocolate.
We will make these over and over! Thanks!

Perfectly spiced and fluffy. These pancakes make a perfect autumn breakfast or brunch food. It’s nice that they are not sweetened. Later, I actually ate some cold without syrup. Yummy!

I made these for my family and they LOVED them! I’m not a big pancake eater, but these were delicious. It was a great way to use up the extra pumpkin I had. I didn’t put any sugar in them; they don’t need it. However, I did add chocolate chips for the kids.

i did add 2T of sugar + a few chocolate chips.
my 9yo daughter declared these the best.pancakes.ever. and i would have to agree. they are so good.

The fall weather makes me want to make all things pumpkin and apple and ginger. These sound so yummy and just right for this time of year when the mornings are so crisp!

For whatever reason, pancakes & I have problems . . . do you know what modifications, if any, would be needed to convert this recipe to waffles instead?

I made these this morning and thought they were ok. The batter is thick, but the pancakes are really thick, even with spreading them out on the griddle. I think if I make them again I would definitely add a little more milk and some more sugar. I added 2 Tbsp, but they were not the slightest bit sweet (I guess I like my pancakes to be a little more sweet so I don’t have to use so much syrup). Anyway, they were good and the kids liked them, just think next time around I’ll make a few changes.
