These were really good! I love the healthy changes – I’ll be making German Pancakes this way from now on.
A classic breakfast favorite, slightly modified to make it a little healthier… No sugar, less butter, and I love to sneak in whole wheat flour whenever possible.
Preheat oven to 450 degrees F. Place butter in a 9×13 dish and allow to melt in the preheating oven.
Meanwhile, whip eggs until thick and lemon-colored (and whip ‘em real good–that’s what makes them fluffy!). Add milk, flours, and salt and mix to combine.
Pour mixture into the pan of melted butter and bake 15-20 minutes (will be puffy and bubbly!). Serve with your favorite fruit on top…and indulge.

I’m a pancake fanatic and had never heard of a german pancake until recently. This looks so yummy with the sneaky whole wheat flour.
