These are simply fantastic!! I doubled the recipe and used an entire can of pumpkin to up the flavor and they were all gone by the next day. I also mistakenly used all baking powder instead of adding soda as well and the batter turned out wonderfully fluffy and perfect! This is the new favorite pancake recipe in our house!

Made these this weekend and they were great. I used whole wheat flour too and they were still fabulous and eaten by everyone…even my oldest who claims to “hate” pumpkin.

First time I’ve ever made Pumpkin Pancakes and this was so, so, GOOD! My guys loved it! I made it healthier using applesauce for the oil, whole wheat pastry flour for the all-purp. flour, and added vanilla and maple extract. YUM!!!

I made these pancakes the day after thanksgiving to use up leftover pumpkin and they were delicious! They were exceptionally moist and flavored perfectly. Not big and fluffy, but still tasty. I will definitely be making these again.

My 11 year old niece mixed these up this morning and I cooked them for the kids (some of the cousins were here on a sleep over). Rave reviews from all kids (and the adults). Easy to make up, very moist- just like pumpkin bread, but in pancake form. Didn’t even need syrup- delicious!

I made these this morning for breakfast and they are AWESOME! They were gobbled up so fast! Thanks for the great recipe! It’s definitely a keeper and will likely be Thanksgiving morning breakfast!

Just made these pancakes this morning. DELICIOUS! This recipe is definitely a keeper. I loved the fact that these honestly tasted of pumpkin, with the delicious pie spices. Super easy to make, and wonderfully moist and flavorful. Thanks, Kaitlin!

I made these for my husband, who is a picky eater (although he will deny it, but it’s true just like the sun will rise tomorrow) and he LOVED them! These were amazing! I plan on making these more often!

These were super-yummy and perfect for a fall morning. The first batch turned out a little thin (probably my fault), so I added a couple of tablespoons of flour, and the next batch was perfect! YUM!

I LOOOOOOOVVVVEEEE pumpkin, and these pancakes were just the thing for me! The batter made quite a batch, so I simply froze the remainder. I take out a few, nuke them for a minute, put a small spread of butter on, then nuke again for 1/2 a minute. MMMMM MMMM GOOD! Thanks for a great recipe.

absolutly delicious! i had to add a few tablespoons of flour to thicken it up, then they cooked just fine! so thanks for that suggestion!! will be cooking these again before this holiday season is over with!
