Description

Scrumptious buttermilk pancakes with the addition of pumpkin and spices, making them a perfect fit for a chilly fall morning!

Ingredients

  • 1 cup All-purpose Flour
  • ¼ cups Granulated Sugar
  • 1-¼ Tablespoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Pumpkin Pie Spice
  • ½ teaspoons Ground Cinnamon
  • 1 cup Buttermilk
  • ¼ cups Vegetable Oil
  • 1 whole Egg
  • ⅔ cups Canned Pumpkin

Preparation

Mix all of the dry ingredients together thoroughly. Add the buttermilk, oil and egg. Whisk all ingredients until thoroughly blended. Add pumpkin; mix well.

Heat a griddle or skillet on medium heat. Very lighty spray or brush with oil. Using a ladle or ice cream scoop, pour a small portion of the pancake batter onto the griddle or skillet to form your pancakes. Once bubbles start popping up, gently flip the pancakes. Finish cooking until nice and golden brown on both sides.

I made these for the first time this morning, let me just say this, it won’t be the last time I make them!!! They are wonderful!!!!! Yummy!!!!

I made these this morning for my family and got a positive review from my family. My wife did mention and I concur, that the recipe lacks salt, especially with the pumpkin puree. A half a teaspoon of salt would probably do the trick.

We made these this weekend for breakfast and really enjoyed them! My oldest claims to “hate” pumpkin and he did ask “are these the same pancaked we always have” but ate them without any hesitation. I put some pumpkin butter on top of mine and they were great! We had no problem with the batter being too runny either.

These were amazing!!! The pumkin flavor was perfect! I’m not sure if I can go back to regular pancakes!

absolutly delicious! i had to add a few tablespoons of flour to thicken it up, then they cooked just fine! so thanks for that suggestion!! will be cooking these again before this holiday season is over with!

I made these pancakes the day after thanksgiving to use up leftover pumpkin and they were delicious! They were exceptionally moist and flavored perfectly. Not big and fluffy, but still tasty. I will definitely be making these again.

First time I’ve ever made Pumpkin Pancakes and this was so, so, GOOD! My guys loved it! I made it healthier using applesauce for the oil, whole wheat pastry flour for the all-purp. flour, and added vanilla and maple extract. YUM!!!
