Description

This recipe is fun to make. Store-bought noodles are fine, for the most part, but homemade pasta noodles offer a completely different texture and taste experience.

Ingredients

  • ½ pounds, ⅞ ounces, weight Flour, All Purpose Plus Extra For Flouring Work Surfaces
  • 1 Tablespoon Corn Flour
  • ½ teaspoons Salt
  • ½ Tablespoons Baking Powder
  • 8 tablespoons, 2 teaspoons, 6 pinches Water (warm)
  • ½ teaspoons Corn Oil

Preparation

Sift the flour. Pour flour in a bowl. Now make a well in the center of the flour and add corn flour, salt and baking powder. Mix well, about one minute.

Next combine water and corn oil. Pour it into the flour mixture. Use your hands and knead the dough about 15 minutes, adding a little flour if necessary. Dough must be smooth and pliable.

Now cover the dough with a tea towel and allow to relax about 30 minutes.

Take the dough out of the bowl and roll it into a large rectangle 12×12 inch and 1/8 inch thick in size, using a rolling pin. Use more flour for dusting.

Using a very sharp knife, cut dough into 1/8 inch wide strips. Take the strips one by one and pull them out to stretch them – use your fingers. The strips become longer than they were before.

To cook noodles, take a large pot. Pour 500 ml water and add 2 teaspoons salt. When the water is boiling, add noodles. They cook in about 10 minutes. Remove cooked noodles using tongs and put them in a colander. Drain well. Do not rinse.

Enjoy.
