Description

Hyacinth’s jewels—renamed “Everything Cookies” by yours truly because they have lots of delightful stuff in them and because I didn’t like their given name, “Garbage Cookies.” These cookies are flavorful, satisfying, and chock full of delicious dried fruit, crunchy nuts, and all the good things in life.

Ingredients

  • 1-½ cup Butter
  • 1-½ cup Sugar
  • 2 cups Brown Sugar
  • 4 whole Eggs
  • 2 teaspoons Vanilla
  • 4-¼ cups Flour
  • 4 teaspoons Baking Soda
  • 1 teaspoon Salt
  • 1-⅓ cup Quick Oats
  • 3 cups Quaker Granola (oats And Honey, Yellow Box)
  • 1-½ cup Chopped Pecans
  • 1-½ cup Cran-raisins
  • 1-½ cup Apricots

Preparation

Cream butter and sugars. Add egg and vanilla. Next add flour, baking soda, and salt. Add in oatmeal and granola. Fold in pecans and other ingredients.

With cookie scoop or two spoons, drop onto cookie sheet and bake at 375 for 10 minutes. Eat—and feel unguilty because there’s no chocolate in this cookie.

These cookies turned out great, but be warned – this is a double batch! After setting off the fire alarm and realizing that one of my cookie sheets doesn’t fit in my new apartment’s oven, this is making wayyyy more than 36 cookies.

I wasn’t sure exactly what kind of granola she was talking about – I saw kinds with clusters of granola and what looked like regular loose oats. I looked for the Quaker granola and didn’t see it, and ended up buying a cranberry version instead. The flavoring is kind of powerful, so next time I’ll get the plain stuff that doesn’t come in clusters, since it’ll probably break up in the mixing process anyway.

Even so, these are making my place smell wondrous and they taste great. I’d make them again . . . maybe.

Even the pickiest eaters loved these cookies.. because we like guilt, we added a handful of white chocolate chips which complimented the apricots in such a way that I gasped out loud! Skirt flying up good!!

Wonderful. Absolutley wonderful. Makes a very very thick and stiff batter–gave my Kitchen-Aid a run for its money! Also, I halved the recipe and it made 36 nice sized cookes. I rolled the dough into walnut-sized balls and they spread out nicely.

love, Love, LOVE these cookies!! Every generation in our family LOVES them. They are grandpa’s favorites as well as our daughter’s collegiate friends.
You will NOT go wrong with these cookies.
And if you’re not worried about the guilt, do as we do… add a handful (1cup – 1-1/2cups) white chocolate chips.
