Description

Such a delicious treat that you might want to double the recipe!

Ingredients

  • FOR THE COOKIE:
  • 2 whole Large Eggs
  • ½ cups Vegetable Oil
  • ¼ cups All-purpose Flour
  • 1 box Devil's Food Cake Mix, 18.25 Oz
  • _____
  • FOR THE FROSTING:
  • 4 ounces, weight Cream Cheese, Softened
  • ¾ cups Smooth Peanut Butter
  • 1 teaspoon Pure Vanilla Extract
  • 2-½ cups Powdered Sugar
  • 3 Tablespoons Milk

Preparation

For the cookies:

Preheat oven to 350ºF. Lightly whisk eggs and oil in a medium bowl. Mix in flour and cake mix until well blended. Roll into 1 inch balls and bake for 8-10 minutes on an ungreased cookie sheet. Cool completely on a wire rack.

For the frosting:

In a medium bowl cream together cream cheese, peanut butter and vanilla. Add in powdered sugar and mix until smooth. Add in milk a little at a time until you get the desired consistency.

Spread about 2 Tablespoons of frosting onto the bottom of one cookie and then place another cookie on top, bottom sides facing in. Repeat with remaining cookies and frosting.

I can’t decide. I will either never make these cookies again, or I will make these cookies every single week! They are so tasty, so easy, and so bad for my waistline! Evil to have in the house, but a sin to never make them again! Thanks for a great recipe.

These were sooo good!! I really noticed a difference (not a good one) when I used a cheaper cake mix. I’ll stick with Duncan Hines or Betty Crocker for sure. Definitely a keeper!

Absolutely delicious. I made them for a friend who loves peanut butter, and these were a huge hit. Once assembled, the cookies are huge, so one is plenty for a serving. Definitely make sure you don’t overbake, as having the cookie chewy is key with the filling.

Oh. Wow. These are so yummy and rich. I can’t have more than 1.5 in a single sitting and even then they need milk! I would also say there is more than enough filling with this recipe, so try halving the amounts. They remind me a bit of a “whoopie pie” a friend brought to school once. So good and deceptively easy!
