In a large bowl, combine the garlic, tomatoes, walnuts, basil, salt and oil. Let sit for about 20 minutes, if you can. (I couldn’t.) Toss with zucchini!
I have now made this three times! I love it! I used a mandoline with a julienne blade to cut the zucchini, but will be getting a spiralizer soon. I use a whole roma tomato cut up instead of cherry tomatoes. Thanks for such a great recioe!
