Description

An easy way to get your veggie and egg fix!

Ingredients

  • ½ cups Milk
  • 4 whole Eggs
  • 3 whole Garlic Cloves, Peeled And Minced
  • ½ whole Medium Onion, Chopped
  • 1 Tablespoon Cumin
  • ½ teaspoons Red Pepper
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • ½ cups Shredded Mozzarella, Divided
  • ¾ cups Mushrooms, Sliced
  • 1-½ cup Fresh Spinach
  • 1 whole Medium Tomato, Sliced

Preparation

1. Heat oven to 350°F. Spray 9-inch pie pan with cooking spray.
2. In medium bowl, whisk together milk, eggs, garlic, onion, seasoning and 1/3 cup of cheese until blended (you can season more according to taste).
3. Stir in the mushrooms and spinach, then pour into the pie plate.
4. Randomly place tomato slices all over mixture. Sprinkle the remaining cheese on top of the mixture.
5. Bake 30 to 35 minutes or until a knife inserted in the center comes out clean.

Yum, yum, yum! I have to imagine this would amazing with some asparagus and fontina cheese as well :) Can’t wait to try it!
