Healthy, vegetarian version of shepherd’s pie.
Heat a pot of water to boiling. Clean, peel and largely dice the potatoes. Add the potato chunks to the boiling water.
Throw the onion and olive oil into a frying pan and heat until just golden. Add the sun-dried tomatoes, Worcestershire sauce, and kidney beans. Once the kidney beans have heated through, mash with a potato masher. Add the carrots, peas, and corn to the mashed beans and combine.
At this point, your potatoes should be done cooking. Check by poking them with a fork; if they’re soft, then drain them in a colander and put them back into the pot with the milk and butter. Pull out your potato masher again and mash away!
Spread the veggie mix in the bottom of a baking dish. Spread the mashed potatoes on top, sprinkle with the grated cheese, and broil until golden and crispy.

Quick and easy to make!! The bean mixture is a bit on the dry side, so I think next time I make this I will add some canned diced tomato, or omit the w. sauce and use salsa or tomato sauce. Thanks for sharing!!

I didn’t actually taste this, but I made it for a friend who is vegetarian and was recovering from surgery. She LOVED it!

I found this by searching on the few ingredients I DID have (I was going grocery shopping the next day and was really low on staples!). I made it with a frozen veggie blend instead of peas and corn. It was spectacular! Tasty, easy, filling. My husband was skeptical about a vegetarian version of shepherd’s pie, but after he ate it he was really pleased!

I haven’t tried this recipe, but I just wanted to make a note for people who are following strict vegetarian diets. Worcestershire sauce is not always vegetarian — it almost always has anchovies in it.
There are a few brands of vegetarian/vegan Worcestershire sauce, including Annie’s and Wizard I believe.
