Quick, easy, health, and delicious! Serve this with pita chips and tzatziki for a complete meal. Feel free to experiment with whatever veggies you have on hand.
1. Prepare tabouli according to package directions, or make your own.
2. While it is cooking/cooling, chop the tomatoes, cucumber, onion, peppers, and pickles. The pieces should all be relatively similar in size. Put the veggies in a large bowl with the chickpeas.
3. Once the tabouli is done, put it in the bowl with the veggies. Add the lemon juice and zest and olive oil, and toss to distribute everything evenly.
4. Top with feta and enjoy!
