Description

This easy sweet potato black bean burger recipe is amazing. Plus it’s vegan! You can make this sweet potato burger with quinoa as well, or an egg and bread crumbs if not vegan!

Ingredients

  • 2  Sweet Potatoes
  • 1 can (19 Oz. Size) Black Beans
  • 1 cup Cooked Rice (Substitute Quinoa Or 1 Egg With Flour)
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Flakes

Preparation

Pierce sweet potatoes and microwave until they are tender and you can stick a fork the whole way through with ease.

While those cook, drain black beans and mash them in a bowl. Add cooked rice. Mash again!

Time to add the spices. I used paprika, cumin and chilli flakes, but you can use chipotle seasoning or skip it if you don’t want a little kick.

Once sweet potatoes are done, cut in half and scoop out the insides. Add to the rice and bean mixture and mash some more.

When that’s all done and mashed together, take a chunk and form a ball. Flatten that ball into a patty. It may be a bit hard to handle but it will be better once you get it on the grill.

You could also bake them, but if it’s nice out, why not grill? Throw those patties on the grill and wait until they are nice and brown before flipping them over. They’ll be so crispy and delicious once they are done.

I topped mine with avocado and some ranch sauce (which isn’t vegan) but you can top yours with whatever you want. Enjoy!
