Something to do with those oversized squashes from the Farmer’s Market!
Preheat the oven to 375F. Cut the squash in half lengthwise and scoop out seeds. Layer 3/4 cup breadcrumbs, onion, mushroom, and 1/2 butter in one half of the squash, then cover with more breadcrumbs. Repeat with other squash half. Sprinkle cheese on top and bake for 30-40 minutes.
