A meal for one!
Cook quinoa per package instructions. Cut the pepper in half lengthwise and take out seeds. Set pepper halves aside. Preheat oven to 350 F.
In a large bowl mix together chopped scallions, peas, quinoa, garbanzo beans, salsa, Sriracha sauce, shredded Mexican cheese, salt and pepper (to taste). Stuff peppers with mixture, put them in a baking dish and bake at 350 F for 30-40 minutes. Enjoy!
