Need a quick healthy lunch? Look no further! Avocado, spinach, and spicy pepper jack cheese come together perfectly in this dish!
Heat a skillet or cast iron grill top to medium heat. Lay the tortilla shell in the skillet, top with cheese and avocado slices. Heat until cheese is melted and the bottom of the tortilla shell is slightly brown.
Meanwhile, in a small bowl, mix cilantro, salsa, sour cream, and chili powder in a bowl.
Remove tortilla from heat, add spinach and creamy chili sauce, fold over and serve.
Makes 1 serving.
