A delicious pate made of soy.
Pick over the soy beans. Wash, and then soak overnight.
The next day, boil the soy in plenty of water (about 5 -6 liters). Let it boil for 2-3 hours. After cooking, strain it and put it in a bowl with chopped onion and salt.
Mix well with a mixer or blender, and gradually add oil and tomato juice. (The tomato juice sweetens the sometimes-bitter taste of soy.)
Finally, sprinkle with parsley.
