Unlike the fast-food versions, this vegetarian fried rice is actually a balanced meal all by itself and only takes 10 minutes to make!
1. Heat a large frying pan on medium heat. Add half of the oil and coat the pan before cracking the eggs directly into the pan (no need to beat them first). Stir the eggs as they cook, adding salt and pepper to your taste.
2. Add the veggies and stir every few minutes until they are mostly thawed. Fresh veggies are a great choice too, but you will have to cook them separately from the egg as they tend to take longer than their frozen counterparts.
3. Once the veggies are thawed, stir in the cooked rice, along with the remaining half of the oil. Pour the soy sauce over the mixture and fry for about 5 minutes, stirring every minute or two, until the rice and veggies start to brown slightly and all the liquid is absorbed.
