Grown tired of the same old boring sandwich ends? These delicious spinach pancakes may just be the best thing since sliced bread. Easy, delicious and bright green! Substitute a gluten-free flour if that suits your fancy!
Blend eggs and spinach in a blender or food processor until smooth. Add salt and pepper to taste. Mix in flour until smooth.
Spoon 1/4 cup dollops onto a lightly oiled skillet or griddle over medium-high heat. Brown on both sides and serve hot, or let cool and use in place of bread with your favorite sandwich fillings!
