So easy and tasty. Perfect for any weeknight. Serve it up with some fluffy white rice and you have an excellent meal.
Heat oil in a pan and add the mustard and cumin seeds. Once the mustard starts to sputter, add the onions and eggplant and fry till they are just softened. Then add the cashews and fry till the eggplant is completely cooked (to your desired texture). Add the salt, turmeric and chili powder and remove from heat. Sprinkle with fresh cilantro to serve.
