The miso baste gives this eggplant a slightly tart but sweet flavor that is absolutely fantastic. The glaze only takes a few minutes to mix up. It’s quick, easy and delicious!
Preheat broiler.
Combine first 8 ingredients in a medium sized bowl, stirring with a whisk.
Arrange eggplant slices on a rimmed baking sheet that you’ve coated with olive oil. Spread miso mixture evenly over the eggplant slices.
Broil 8-10 minutes or until topping is golden. Remove pan from oven. Arrange eggplant slices on a platter and serve!
