Description

The perfect side dish or meal in itself: quick, easy, foolproof.

Ingredients

  • 1-½ cup Water
  • 1 cup Quinoa
  • 1 Tablespoon Olive Oil
  • 1 whole Shallot (or 1/2 Red Onion)
  • 1 pinch Red Pepper Flakes, to taste
  • 1 clove Garlic
  • 1 ear Corn
  • 1 cup Halved Cherry Tomatoes Or Diced Tomato
  • 1 pinch Salt
  • 1 pinch Black Pepper
  • ¼ cups Chopped Parsley (optional)

Preparation

1. In a large saucepan, bring water to a boil while you rinse quinoa. Stir in quinoa. Cover, reduce heat to low and simmer for 15 minutes. Remove from heat and set aside until all liquid has been absorbed.
2. Heat olive oil in a skillet over medium heat. Saute onion and red pepper flakes until tender. Add garlic. Mix in corn and cherry tomato halves or diced tomato until just heated through. Season to taste.
3. Toss quinoa with the skillet mixture.

Note: For a non-vegetarian meal, add shrimp to the onion, red pepper, garlic mixture and cook until almost done. Then add tomatoes and corn, etc. For another non-vegetarian meal, brown on all sides four scallops per person to top a mound of the quinoa/corn/tomato mixture.
