Delicious savory quinoa made in one pot. Combined with edamame and corn this is a filling side dish or vegetarian entree.
1. Rinse quinoa. Bring the broth to a boil in a saucepan. Add quinoa and bring it back to a boil.
2. After 10 minutes add the edamame and cook for 4 more minutes.
3. Add the corn and cook for 1 minute more, until corn is warmed through. Remove pan from heat and put the lid on.
4. Let it stand, covered with a lid, for about 10 minutes.
5. Fluff the quinoa with a fork. Mix in the soy sauce, green onions, and salt and pepper.
6. Serve as a side dish or a vegetarian main dish.
