High protein red quinoa loaded with vegetables.
Place the water in a saucepan and bring to a boil. Add the onion, garlic, carrots, tomato, green peas, salt, parsley and Italian seasoning and let it boil again. Add the red quinoa, reduce to simmer and cover the saucepan. After 10 minutes, add the broccoli florets and cover again. Cook until all water is absorbed (about 5 more minutes, or a total of 15 minutes after adding the quinoa). The grains should be soft and the red becomes translucent. Remove from the heat and add the olive oil. Serve warm or at room temperature with some lemon juice.
