Tasty polenta rounds dipped in egg and bread crumbs and topped with warm tomato sauce and melted cheese. Quick and easy!
1. Heat oil on the stovetop over medium heat to get read for frying.
2. Slice the polenta into rounds. Put your beaten egg in one bowl and your breadcrumbs in another bowl. Dredge the polenta rounds in the egg wash and then into the breadcrumbs. Place in the oil. Turn once the bottom of the polenta round begins to heat and brown on the bottom side. After the round has been entirely browned on both sides, place on a cookie sheet (mine was covered in foil with some baking spray.) Repeat with remaining polenta rounds.
3. After all of the polenta is on the cookie sheet, top with a spoonful of pasta sauce or tomato sauce and some cheese. Place under the broiler (on high) for a minute or two.
These are definitely best served warm. Enjoy!
