Description

Puff pastry, pizza sauce and lots of vegetables topped with cheese and olives are transformed into mouth-watering snack!

Ingredients

  • 2  Rectangular Sheets (275g Size) Puff Pastry
  • Pizza Sauce
  • 3  Medium Tomatoes, Thinly Sliced
  • ½  Aubergine (eggplant), Sliced Or Diced
  • ½  Zucchini, Thinly Sliced
  • ½  Small Onion, Thinly Sliced
  • 20 grams Goat Cheese Or Blue Cheese, Sliced Or Crumbled
  • 12  Black Olives, Thinly Sliced
  • 2  Chilli Peppers, Thinly Sliced (optional)
  • 50 grams Arugula (Rucola)

Preparation

Line a baking tray with baking sheet.

Roll out puff pastry. Use a 13cm or 5-inch bowl to cut rounds out of the pastry. Transfer them onto the baking tray. Use a smaller bowl or cookie cutter (10cm or 4-inch) to create an impression on the individual pastry rounds.

Spread pizza sauce over and top with tomatoes, eggplant, zucchini, onion, cheese and olives. Bake in a preheated oven at 200ºC (400ºF) for 15 minutes or until edges have risen and pastry has nice golden color. About 5 minutes before taking it out, add some finely chopped chilies (optional).

When ready, top with arugula and serve!
