Description

A healthy and colorful no-cook meal for the summertime.

Ingredients

  • 4 whole Tortillas, Wheat Or Flour
  • 4 Tablespoons Hummus, Any Flavor
  • ½ whole Cucumber, Diced Or Sliced
  • 1 cup Shredded Lettuce
  • 1 whole Roma Tomato (medium), Diced
  • 4 Tablespoons Feta Cheese
  • 2 teaspoons Capers

Preparation

Spread about 1 tablespoon hummus evenly on each tortilla. Place about 3-4 slices of cucumber down the middle of each wrap. Sprinkle remaining ingredients (lettuce, tomato, feta and capers) on each wrap evenly. Fold and enjoy. If you want more protein or more filling, add grilled chicken.

Thanks for the inspiration! I used cheddar cheese instead of feta as that is what I had on hand. Also, I didn’t have any capers so I didn’t use those. I had two smaller sized tortillas and it was a yummy and filling lunch!
