These Green Goddess Fajitas are paleo, plant-based, and super yum! Drizzle with peppered olive oil or top with your favorite veggie or avocado dip.
For each fajita, overlap 2 lettuce leaves (stemmed ends overlapping) and top with 2-3 kale pieces. Add 3 cucumber halves, 2 sliced onion halves, 1-2 tomatillo slices, and 2-3 tablespoons diced avocado.
In a separate jar, combine olive oil, salt, and pepper. Drizzle lightly over each fajita.
Serve immediately. Add more pepper as desired.
