Description

A wonderful meatless dish, so full of flavors, easy and fast to make, cheap and so satisfying!

Ingredients

  • 2 whole Zucchinis, Large
  • 1 Tablespoon Butter
  • 1 whole Onion, Chopped
  • 1 whole Tomato, Chopped
  • 1 Tablespoon Garlic Powder
  • 3 ounces, weight Feta Cheese, Crumbled
  • 1 whole Egg
  • 2 Tablespoons Cornmeal
  • 1 Tablespoon Paprika Powder
  • 3 Tablespoons Dried Thyme
  • ½ teaspoons Salt
  • 1 teaspoon Black Pepper

Preparation

Preheat your oven to 350°F. Line a baking sheet with parchment paper.

Cut your zucchini lengthwise in half and take the insides out (with a little spoon) and place zucchini halves on the baking sheet. Do not throw away the insides!

Bring the butter in a large skillet over medium heat. Add onions, zucchini insides, tomato and garlic and cook for about 8 minutes, set aside.

In a medium bowl combine feta cheese, egg, cornmeal, paprika, thyme, cooked vegetables and salt and pepper. Mix until well combined and taste to see if you’d like more spices in it.

Fill zucchini halves equally with veggie feta mix. Bake for 30 minutes, then turn on your broiler to high and broil for 5-10 minutes.
