When we think of summer vegetables, the first name that comes to our mind is cucumber. Gazpacho is a cold soup and basically a salad in liquid form.
1. Peel and deseed cucumbers, then roughly chop them.
2. Soak bread slices in water (just enough to create a mash) for few minutes.
3. Blend cucumbers, grapes and bread mash.
4. Strain the puree.
5. Now add water, grated garlic, vinegar , lemon juice, coriander leaves and salt.
6. Refrigerate for at least 1/2 hour.
7. Serve chilled.
