The goat cheese gives this quesadilla a rich and unique taste (and eliminates the need for sour cream). Try adding your favorite vegetables!
- Slice the onion into long, thin strips.
– Heat a sauté pan over medium-high heat and coat with cooking spray.
– Add onion and sauté until lightly browned (about 10 minutes).
– While onions are cooking, spread goat cheese on each tortilla in an even layer.
– Remove onions from pan.
– Put onions on top of goat cheese on one tortilla.
– Add layer of sun dried tomatoes and spinach.
– Place other tortilla on top (goat cheese facing in).
– Add more cooking spray to pan.
– Put quesadilla in sauté pan over medium heat and warm through (about 2-3 minutes per side).
– Cut into small wedges and enjoy!

I’m eating these right now, not bad! I tossed the onion slices in some sugar to help caramelize them, and included sliced black olives in the quesadillas.
