These delicious black bean burgers are a cheap, easy substitute for hamburgers. You can modify this recipe by adding lots of delicious spices or veggies depending on your mood. Serve them just like a regular burger on a bun with all the fixins.
Drain and rinse the black beans. Let almost all of the water run off.
Put the beans in a bowl and mash them until they are thick and creamy.
Finely chop (or use a food processor) the onion and green pepper. Mix these into the beans. (At this point you can add any other ingredients you want. I sometimes add celery, carrots or half a can of finely diced, drained tomatoes. Just make sure everything is chopped up really small.) Add the seasonings.
Add the egg to the bean mixture and begin mixing in bread crumbs. Keep adding bread crumbs until the whole mixture sticks together really well.
Bake or grill just like a normal burger, but for a little less time. I always grill mine and it takes about 8 minutes on each side. The good news is that it is really hard to overcook these burgers. When you cook them, you really just want to heat them through and cook the veggies a bit.

You can replace the egg with a tbl of flax seed meal and water or a 1/2 cup quick oats and water. Both will make a nice binder for this.

being a vegeterian I’ve been looking for an easy, but tasty bean burger … only thing I am not thrilled with is the egg.
Wonder if i leave it out if the burger will stick together as well.
I’ll let you know.
